What Electrical Information Should a Commercial Kitchen Equipment Schedule Include?

A usable kitchen equipment schedule must say more than '13 amp' or 'three phase': it should identify the exact model, supply arrangement, rated load, connection method, isolation, protection and control interfaces.

The short answer

For every item, record manufacturer, model, quantity, voltage, frequency, phase arrangement, total rated input, full-load current where stated, neutral requirement, connection type, plug or terminal details, local isolation, protective-device requirements, cable entry position and any control interlock. Mark whether the data is tender-stage allowance or confirmed order information. The electrician must design the circuit from current manufacturer data and site conditions, not a generic kitchen-plan symbol.

Separate design allowance from final connection data

Consultant schedules are often prepared before the final equipment model is chosen. A 20 kW allowance can reserve capacity, but it does not tell the installer whether the ordered appliance is 400 V three-phase with neutral, 230 V single-phase, supplied with a cord, or intended for fixed wiring. Keep a revision column and require supplier submittals before circuit installation. If the model changes, reissue the schedule and mark affected drawings.

Use the type plate and installation manual, not the sales brochure alone. Options can change connected load: steam generators, heated rinse tanks, booster heaters, integral condensers and stacked units all affect supplies. Imported equipment may be offered in several voltage versions. Confirm the exact UK configuration ordered and whether the manufacturer permits field conversion.

The schedule must coordinate controls as well as power

Record extract interlock, volt-free contacts, emergency-stop logic, gas-interlock status, remote monitoring, data connection, dosing pumps and external condensers. A low-power control cable missed from the builders' package can prevent a high-value machine commissioning. Show which contractor supplies and terminates each end.

The electrical schedule should align with the services matrix in the site survey. It also needs installation status: existing supply verified, new circuit required, board capacity pending, cable route agreed and isolator position approved.

  1. Assign a unique equipment reference matching plans and elevations.
  2. Record exact manufacturer, model and option configuration.
  3. List voltage, frequency, phases, neutral, rated input and current data.
  4. State fixed, plug/socket or manufacturer-supplied connection arrangement.
  5. Define local isolation, protective requirements and cable entry position.
  6. List control, interlock, data and external accessory connections.
  7. Name the supplier and installer responsible for each interface.
  8. Replace provisional allowances with approved submittal data before installation.

Commissioning and handover

The final schedule should match the labels on distribution boards, isolators and appliances. Attach manufacturer data sheets, circuit references, test certification and commissioning results. Record any setting or link used to configure the appliance for the available supply. Future replacement decisions become safer when the schedule distinguishes available circuit capacity from the load of the outgoing appliance.
