Does a Commercial Kitchen Need Extraction?

A commercial kitchen needs effective and suitable ventilation. In many kitchens that means mechanical extraction through a canopy or other local system over the cooking appliances. Whether a particular low-intensity or all-electric operation needs the same type of externally ducted system depends on the equipment, emissions, manufacturer instructions, building and local planning/environmental requirements.

Why “it is only electric” is not the answer

Gas appliances create combustion products as well as cooking emissions, so gas introduces additional ventilation, flue and interlock considerations. But electric cooking can still produce:

  • heat;
  • steam and condensation;
  • grease aerosols;
  • smoke and fine particles;
  • food odour;
  • an uncomfortable working environment.

The ventilation assessment follows the process and appliance, not just the fuel label.

Under regulation 6 of the Workplace (Health, Safety and Welfare) Regulations 1992, enclosed workplaces need effective and suitable provision for sufficient fresh or purified air.

The HSE's guidance on ventilation of kitchens explains that cooking can generate significant fumes, vapours and heat, and that ventilation is needed to remove them and discharge them safely. Mechanical extraction through a canopy is the normal approach for many cooking operations, alongside general room ventilation and replacement air.

The law describes the outcome. The actual system requires a competent assessment.

Situations that commonly require local mechanical extraction

Dedicated capture and extract should be expected where equipment or processes generate a significant plume, including:

  • deep-fat frying;
  • griddles and bratt pans;
  • chargrills and salamanders;
  • woks and high-temperature ranges;
  • combination ovens and ovens releasing heat or steam when opened;
  • pressure or atmospheric steam equipment;
  • solid-fuel, charcoal or wood-fired appliances;
  • high-volume cooking;
  • processes producing smoke, grease or persistent odour.

The canopy or hood must be designed for the actual appliances and duty. A domestic-style hood is not automatically suitable simply because the room is small.

What about coffee shops, delis and light reheating?

This is where generic yes/no answers become unreliable.

A business using enclosed appliances for limited reheating may present a lower emission load than a full cookline. However, the project still needs to consider:

  • manufacturer ventilation instructions;
  • heat and moisture released into the room;
  • frequency and intensity of use;
  • door-opening plumes;
  • staff comfort;
  • food odour reaching neighbours;
  • the room's general ventilation;
  • landlord, building-control and environmental-health expectations;
  • the risk that the menu or equipment will expand later.

An apparently light operation can become a ventilation problem when several appliances run together in a small sealed unit.

Can a recirculating system replace external discharge?

Sometimes a carefully selected recirculating solution is proposed where external ductwork is impossible. It should not be treated as a universal shortcut.

Recirculation has to address the contaminants produced and maintain a suitable working environment. Grease and odour filtration do not automatically remove heat, moisture or combustion products. Gas and solid-fuel appliances introduce issues that make simple room recirculation inappropriate.

Local expectations can be strict. For example, Westminster's environmental guidance only considers specified recirculation arrangements in particular electric-cooking situations and requires evidence that odour and fume can be controlled while maintaining staff conditions. Other councils may take a different approach.

Obtain agreement on the strategy before buying equipment.

Gas appliances and interlocks

Gas catering appliances require competent gas-safety and ventilation assessment. Where gas appliances operate with mechanical ventilation, the gas and ventilation systems may need to be interlocked so gas cannot continue under unsafe ventilation conditions.

BS 6173:2020 covers installation and maintenance of gas-fired catering appliances. IGEM/UP/19 Edition 2 addresses commercial catering interlock systems.

Only a suitably qualified Gas Safe registered engineer should assess and work on the gas installation.

Extraction also needs replacement air

Removing air without replacing it can create excessive negative pressure. That may cause draughts, difficult doors, poor capture and unsafe interaction with combustion appliances or flues.

Replacement air must therefore be designed as part of the system. Opening a back door is not a dependable engineered strategy, particularly when weather, security and staff behaviour change.

Planning permission can decide what is feasible

An external duct, fan or terminal may require planning permission. The local authority may consider visual impact, noise, odour, discharge location and proximity to homes.

Before committing to a unit, establish:

  • whether a suitable route to high level exists;
  • who owns the walls, roof and route;
  • whether neighbours have windows or balconies close to the discharge;
  • whether the lease permits external equipment;
  • whether a noise or odour assessment is likely;
  • whether the cooking proposal is compatible with the site's planning position.

Questions to answer before selecting a system

  1. What exact appliances will be installed?
  2. What do their installation manuals require?
  3. What food, volume and hours are proposed?
  4. Which emissions are created: heat, steam, grease, smoke, odour or combustion products?
  5. Where can the extract discharge?
  6. How will replacement air reach the kitchen?
  7. Are gas or solid-fuel appliances involved?
  8. What noise and odour risks exist at nearby receptors?
  9. How will filters, ductwork and fans be cleaned and serviced?
  10. Which professional is responsible for design and commissioning?
