An electronic gas appliance does not simply create a spark and open the valve indefinitely. It follows a timed safety sequence: confirm prerequisites, create ignition, admit gas, prove flame and shut down safely if the expected signal is missing.
Safety first: Stop repeated reset attempts if ignition is delayed, gas can be smelled, flames light with a bang, the appliance locks out again or the burner behaves abnormally. Turn it off through the normal control and use a qualified Gas Safe commercial catering engineer.
Important: This is an operator-level diagnostic guide, not a repair instruction. Always follow the appliance manual. Gas work, live electrical testing, refrigerant work and access beyond user-serviceable parts must be carried out by people with the required competence and qualifications.
How the appliance and safety sequence work
The exact sequence varies, but a controller may first check door, temperature limit, fan or air-pressure switch and kitchen interlock status. It then energises an ignition transformer or hot-surface igniter, opens one or more gas valves and looks for a flame-proving signal within seconds.
Flame rectification uses the flame itself to conduct a very small current from the electrode to burner earth. Contamination, cracked ceramic, poor earthing, reversed polarity, moisture, weak flame or control failure can make a real flame invisible to the controller. The safe response is to close the valve and lock out.

Safe checks for kitchen staff
- Photograph the lockout code: The original code and sequence may be lost after repeated resets.
- Confirm the interlock: Check that the kitchen ventilation and gas-safety panel show normal status.
- Listen without dismantling: Record whether the fan starts, an air switch clicks, spark is heard and a brief flame is visible through the intended viewing point.
- Check other gas appliances: Note whether they are also unavailable, but do not use another appliance to prove the affected unit is safe.
- Review cleaning and moisture: Tell the engineer if the fault began after washing, boil-over or overnight condensation.
- Limit resets: Follow the manual. A recurring lockout needs diagnosis rather than another attempt.

Protective devices and lockouts are evidence. Bypassing them may temporarily hide the symptom while removing the control intended to prevent fire, shock, gas release, pressure, contamination or equipment damage.

Repair or replace?
Electrodes, leads, fans, switches and valves are common repair items. Replacement should be considered when burner assemblies are corroded, safety controls are obsolete, certified gas parts are unavailable, the appliance has repeated delayed ignition or the installation cannot provide the pressure, ventilation and electrical conditions specified by the manufacturer.
Request a written diagnosis rather than a parts list alone. It should identify the failed function, the evidence, any upstream cause and the checks required before the appliance returns to service.

- Keep burner areas clean without wetting controls.
- Maintain good protective earth and sound electrical connections.
- Do not change kitchen fan settings without recommissioning implications.
- Record intermittent lockouts before resetting.
