Does a Combi Oven Need Extraction?

Most commercial combi-oven installations need a deliberate ventilation solution for heat, steam and cooking emissions. That may be a kitchen extract canopy, a suitable appliance-specific condensation/exhaust hood or another arrangement permitted by the manufacturer and project design. Gas models add combustion and gas-safety requirements. The exact answer depends on the model and use.

Why a “closed” oven still affects the room

A combi oven contains cooking vapour while the door is closed, but opening the door can release a concentrated plume of:

  • hot air;
  • steam;
  • grease and food aerosols;
  • odour;
  • smoke where high-temperature cooking or particular programmes are used.

The oven also rejects heat through its surfaces and services. Repeated door opening during peak production can create a larger room load than a brochure headline suggests.

Start with the exact manufacturer and model

Obtain the current installation manual before designing the layout. Check:

  • electric or gas version;
  • rated input/connected load;
  • required clearances;
  • permitted hood arrangements;
  • exhaust/vent connection restrictions;
  • water quality and treatment;
  • drainage and condensate temperature;
  • door opening and service access;
  • stacking or Combi-Duo requirements;
  • use of smoking or high-grease programmes;
  • commissioning and warranty conditions.

A condensation hood and a grease canopy are not always the same

An appliance-mounted condensation hood can reduce visible steam and heat released to the room. It should not automatically be assumed to provide the grease, smoke or combustion capture required for every menu.

Ask:

  • What pollutants is the hood tested or intended to capture?
  • Is it permitted for the exact oven and cooking programme?
  • Does it recirculate or discharge?
  • What happens to heat and moisture?
  • Does it require filters or water?
  • What cleaning and service clearance is needed?
  • Does the local authority or ventilation designer accept it for the proposal?

A café baking low-grease products may have a different solution from a production kitchen roasting meat all day.

Gas combi ovens require gas-specific assessment

Gas models introduce combustion air, combustion products, appliance flue/canopy arrangement, gas interlocks and COMCAT competence.

BS 6173:2020 applies to gas-fired catering appliances within scope. IGEM/UP/19 Edition 2 addresses commercial catering interlocks.

The attending engineer must be Gas Safe registered with the category matching the burner's design—potentially COMCAT 1 or COMCAT 5 depending on the appliance. Confirm from manufacturer data and the engineer's live card.

Can the oven sit under the main canopy?

Often it can form part of a main cookline extraction design, but check:

  • canopy projection in front of the door;
  • plume released when the door opens;
  • oven height relative to the filter bank;
  • safe access to controls and service panels;
  • door swing and operator position;
  • heat effect on neighbouring equipment;
  • gas flue/combustion arrangement;
  • fire-suppression coverage where provided;
  • manufacturer's permission for the arrangement.

Do not push the oven forward after installation to clear pipes and leave the door plume outside the capture zone.

Water and drainage are part of the installation

Combi ovens can be sensitive to water quality. Poor water treatment can cause scale, unreliable steam generation and maintenance problems.

Confirm:

  • water hardness and manufacturer treatment specification;
  • cold/hot feed requirements;
  • pressure and flow;
  • backflow protection requirements;
  • drain material and temperature suitability;
  • trapped/air-gap arrangements in the manufacturer's design;
  • fall and route;
  • access to filters and treatment cartridges;
  • condensate and cleaning-cycle discharge.

These details can affect where the oven can realistically be positioned.

Electrical and structural checks

Even gas models can require significant electrical power for fans, controls and steam systems. Electric models can impose large three-phase loads.

Check:

  • supply type and protective device;
  • isolator location and safe service isolation;
  • manufacturer's cable/connection requirements;
  • floor load and level;
  • stand or stacking frame;
  • restraint and movement;
  • route for delivery and eventual replacement.

Common combi-oven project mistakes

  • ordering the oven before confirming available power, gas, water and drainage;
  • assuming the word “ventless” removes every room-ventilation issue;
  • using a condensate hood for a menu it was not intended to handle;
  • ignoring the door-opening plume;
  • placing shelving or a ceiling directly above service access;
  • no water treatment plan;
  • drain route made from unsuitable material or without correct fall;
  • wrong Gas Safe appliance category;
  • no space to remove side panels;
  • no planned service or cleaning regime.
